Zohal Azimi Raja founded the company in Hicksville, Long Island amidst the Covid-19 pandemic. She was baking out of her home kitchen which she quickly outgrew, leading her to a commercial incubator kitchen.

Thin Cookies started as a small business in 2021 but when Zohal quit her day job as a Graphic Designer to grow the company, things changed. Zohal and her husband worked together to single handedly grow the company from 0 wholesale locations to 25+ locations all over New York over the course of one year.

Thin Cookies was having small pop ups around local malls in Long Island, including Broadway Mall in Hicksville and Smith haven Mall in Lake Grove. In November 2021, Thin Cookies had its first holiday kiosk at Broadway Mall and it was a hit. The cookies were slowly gaining popularity among the young crowds and they sold out every weekend.

During this time Zohal and Yoseph started to scout for restaurants to sell in, meeting with owners across New York. Although there were some discouraging moments after pitch rejections, they still kept pushing through and celebrated any wins with new restaurants they brought on. 

Business was doing great and time was flying by. Zohal was enjoying working as a wholesale cookie company but she always wanted to open a brick and mortar. In 2022, Zohal and Yoseph decided to branch out into retail. With a baby on the way, they signed the lease to a building in Hicksville with a clear vision in mind.
